Baked Kale Chips

So last night I made a Kale “caesar” salad. It’s technically just kale, cut into ribbbons, mixed with caesar dressing and freshly grated parmesan. Eh. It’s okay if you’re trying to get some kale into your diet, but I don’t think I’ll be serving it at any dinner parties anytime soon.

But some good did come of this below-average salad –  I ended up with some extra kale and decided to whip up some kale chips. I’ve purchased these from Whole Foods before, and I’ve had friends tell me how easy they are, but this was my first attempt at making them at home. And really, there’s nothing to attempt. They’re super easy, and way better than you would expect.

Baked Kale Chips

1 bunch Lacinato kale (I’m sure you could use any Kale)
1 tablespoon olive oil
Sea salt, to taste
Any other seasoning you like (I used a little bit of Greek seasoning)

Preheat oven to 300°F. Rinse and dry the kale, then remove the stems and tough center ribs. Cut into large pieces, toss with olive oil in a bowl then sprinkle with salt/seasoning. Arrange leaves in a single layer on a large baking sheet. Bake for 20 minutes, or until crisp. Eat.
