Mint Melon Pops- no molds necessary

It’s the second week of June and it’s already sweltering here in Texas. I keep gravitating toward icy cold refreshing treats every chance I get. And when I saw this giant cantaloupe melon at the market the other day I knew exactly what he was destined for- a popsicle.

I had plenty of mint in the garden, one giant juicy melon, and a blender to bring it all together- the one thing I didn’t have was a popsicle mold. I went to three places in search of a simple iced treat freezer mold and was out of luck each time! I couldn’t believe it, so as I was on my way home about to give up on my craving, I realized my melon rind could easily double as the popsicle vessel and I could save a buck. Presto!

 

The recipe is very simple, you only need three ingredients and a blender.

Mint Melon Pops

1 Large Cantaloupe

5-6 Mint leaves

1 14oz. can of sweetened condensed milk

Cut your melon in half and scoop out the seeds. Hallow out the melon flesh with a spoon and transfer in to the blender. Pulse in the blender a few times to break up the melon chunks. Then add the condensed milk and blend until smooth. Add a splash of regular milk if your cantaloupe isn’t juicy enough and needs a little more moisture.

Julienne the mint leaves and stir in so there are little mint ribbons distributed evenly throughout.

The easiest part is that there are no messy molds to fill now! You just pour your mint-melon mix in to the hallowed out melon rind bowls, cover with plastic wrap and freeze overnight.

After a thorough freeze slice very gently with a warm knife. I noticed my wedges were a little slushy still in the very center, so after slicing I laid them on a flat tray and poped them back in the freezer for another 20 min, then they were just perfect!
