My Favorite Cocktail Right Now

I feel like Sarah and I have been on repeat lately, starting off every post with how hot it is in Dallas right now and how we are so desperately in need of cooling refreshment.

Well, I’ve always found it hard to complain about the Texas heat when sipping on this watermelon cocktail. The sweet refreshing watermelon juice with a kick of serrano heat is my favorite concoction as of late. I know most of us like to skip out on rimming the glass with salt or sugar because we tend to get lazy sometimes with garnishes, but I’m seriously advising you not to skip it in this case. The salt-sugar-pepper mix is the perfect accompaniment!

Serrano Watermelon Cocktail

6-10 Serrano Peppers

1 Watermelon

1 lime

1 bottle Silver Tequila

Sprig of Fresh Mint

Salt, Sugar, Pepper for garnish

A day ahead of time take your bottle of tequila pour off two shots (you’ll need the room in the bottle for your peppers to fit in). Slice the stems off the serrano peppers and cut down the middle. Then place 6-10 peppers in your bottle depending on how big they are and how spicy you like it. Let them hang out at room temperature for at least 24 hours to give the peppers plenty of time to release the flavor in the tequila. (could be done up to one week ahead of time)

Begin by juicing your watermelon. I’m lucky enough to have a big Breville juicer to make this easier. I know they are costly, but I can assure you they are worth the investment!!! If you don’t have a juicer at home I’ve found videos like these that show you how to get juice out of a watermelon without the fancy machines. You basically just blend the flesh and then strain it through cheese cloth.

For the garnish mix equal parts salt and sugar on a plate together and add a pinch of fresh ground black pepper.

(For 2 Servings)

Run a lime wedge around the rim of two glasses. Dip the rim in the salt, sugar, pepper mix, and fill the garnished glasses with ice.

In a large shaker or mixing glass fill 3/4 the way full with the chilled watermelon juice. Add 2 shots of your serrano infused tequila, 5-6 torn mint leaves, and the juice of half a lime. Shake to mix well.

Pour evenly between the two garnished glasses & enjoy on these hot summer days.
